Three Sicilian specialists come together

On Tuesday 19 June, three Sicilian experts in their field will come together to produce a feast in the courtyard of the Mister Bianco restaurant in Kew, Melbourne – chef, restaurateur and owner of Mister Bianco, Joseph Vargetto; traditional cheese maker from That’s Amore Cheese, Giorgio Linguanti; and winemaker Paul Scorpo of Scorpo Wines. For one night only, they will join forces to demonstrate how their products marry together.

Guests will start the night at the courtyard at Mister Bianco. Mr Linguanti will share some insight on making mozzarella while demonstrating how mozzarella is ‘pulled’, and award winning winemaker Mr Scorpo will provide some sneak peaks of his current barrel samples, with exclusive insight into his wines, including everything from Pinots to Chardonnays.

The show will then be taken indoors, where Mr Vargetto will serve a menu that cleverly uses Mr Linguanti’s Sicilian style cheeses in unique ways and pairs beautifully with Mr Scorpo’s wines.

The evening will begin with arancini, olives and sparkling wine. This will be followed by a first course of pressed mosaic terrine of local rabbit and foie gras, mini smoked scarmorza soufflé and porcini relish, paired with 2010 Scorpo Estate Pinot Gris. For second course, guests will be served pansotti pasta filled with ‘fiore di burrata’, crayfish, tossed samphire and crustacean sauce paired with 2008 Scorpo Estate Chardonnay. Main course will be duck breast ‘alla porchetta’, mozzarella croquette,celeriac puree and liquorice sauce paired with 2010 Scorpo Estate Pinot Noir and 2005 Scorpo Estate Shiraz. And, to finsh, dessert will consist of a ‘cassatedde di fritti’, ricotta cream ravioli with honey sauce, cassata gelato and orange salad paired with Scorpo Estate Rosé.
