Amaretti biscuits

Biscotti amaretti

Makes 40 biscuits

500g almond meal
300g sugar
2 tonka beans, grated (optional)*
2 tbsp grappa
2 tbsp orange blossom water
300g egg whites
Zest of 3 lemons
Additional sugar to coat the biscuits
Handful of almonds

Preheat the oven to 160°C. In a large bowl, mix the all of the ingredients (except for the extra sugar and almonds). Once well combined, form the mixture into balls (about 15g each) and roll them in sugar. Place the biscuit balls onto a tray lined with baking paper. Place an almond on top of each biscuit and bake for about 20 minutes or until golden.

* An aromatic spice native to South America, tonka beans have a unique and complex flavour and aroma. They can be purchased from selected specialty grocers.
