Broccoletti alla Siciliana
Sicilian style broccoli
This is a very simple Sicilian broccoli dish and can be used as either a side dish or a pasta sauce. It is also a nice accompaniment to a roast or stew.
Serves 4
900g broccolini, cleaned and thick stalks removed
100ml olive oil for cooking
3 cloves garlic, finely chopped
110g green olives, chopped and pitted
1 small hot chilli (or more to taste), finely chopped
150ml extra virgin olive oil
200ml white wine
60g shaved pecorino romano or salted ricotta
400g pasta (spaghettini or pasta of your choice), pot of salted water to boil.
Salt and pepper to taste
In a large, flat based pan, heat the olive oil and sweat the garlic gently to activate the aromas. Add the broccolini and cook gently for about 6 minutes. Add the olives, salt, pepper and white wine, cook until the wine has reduced. To finish, sprinkle with cheese and drizzle with some fruity extra virgin olive oil. At this stage you can add the cooked and drained pasta if desired.
